DISH NAME: Hawawshi (Crispy pita bread Stuffed with Kofta)
DISH COUNTRY: Egypt
INGREDIENTS:
1. 2 pounds ground beef
2. 5-6 pita bread
3. 1/4 cup olive oil.
4. 2 large onion chapped
5. 2 garlic cloves
6. 1/2 cup parsley roughly chopped
7. Mix spices from each one spoon (salt, garlic powder, coriander, paprika.
8. ground cumin, black paper)
Preparation:
1. Preheat oven to 400F.
2. Place a rack on a cookie sheet lined with parchment paper or you can use a grilling pan if you have it.
3. In a deep bowl combine the first onion, garlic, and parsley if using.
4. Add all the spices and mix well to distribute the spice.
5. Add the ground beef and mix well.
6. Warm your pitas in the microwave each for 8 seconds so they will be easier to open.
7. Cut each pita in half and open to make pockets.
8. Stuff each pocket from 1/4 to 1/3 cup according to your liking.
9. Arrange Hawashi on your baking sheet and bake in the middle of your oven for almost 13-15 minutes turning them once in between so the bread crisps up on both sides.
Secret Tips:
Serve these delicious pockets with green salad or Tahini Sauce or Hummus and enjoy
