Instant Pot Beef Stew

Ingredients

· One tablespoon olive oil

· 2 ½ pouinds beef stew meat

· Salt and pepper to taste

· 1 onion diced

· 2 teaspoons minced garlic

· 1 pound small yellow potatoes quartered

· 8 carrots peeled, and cut into 1 inch pieces

· 3 cups of beef broth

· 3 tablespoons tomato paste

· 1 teaspoon dried thyme leaves

· 1 bay leaf

· 1 cup frozen peas

· 3 tablespoons flour

· 2 tablespoons chopped parsley (OPTIONAL)

Step-By-Step Preparation

· Turn the Instant Pot to Saute, and wait for the pot to heat up, then add oil.

· Add the stew meat and season with salt and pepper. Cook meat until just browned.

· Place onion, garlic, potatoes, carrots, beef broth, tomato paste, dried thyme leaves, bay leaf, and salt and pepper to taste.

· Stir to combine the ingredients. Seal the Instant Pot and set to manual High pressure for 30 minutes.

· When 30 minutes is complete let sit for another 20 minutes with the Instant Pot off to naturally release.

· After the 20 minutes carefully vent the pressure valve.

· Remove 1 cup of the stew liquid from the pot. Add flour and whisk until smooth.

· Pour the flour mixture back into the pot, and turn the pot to Saute.

· Add the peas to the pot and stir well to combine the flour mixture and peas.

· Simmer for 3-5 minutes or until stew has started to thicken.

· Sprinkle with parsley, (OPTIONAL) then serve
