BBQ Chicken

Prepare in: Any pan that will accommodate all the ingredients

Serves: About five to six people depending on the size of the chicken.


Calories: Calories don’t count on Fridays, so eat it on Friday.

DISH NAME: BBQ Chicken

DISH COUNTRY: Caribbean

INGREDIENTS

● One whole chicken cut into 8 to 12 pieces

● 2 bottles of BBQ Sauce each bottle 18 oz. BBQ sauce of your choice (I use the Trader Joe’s TJ’s Kansas City Style BBQ Sauce.

● One head of garlic

● ½ a cup of grape seed oil

● 1 tsp Salt

● 1 tsp Pepper

● 1 TBSP Paprika (I prefer the smokey paprika)

● 1 tsp Cayenne pepper (This is optional)

● 1 TBSP Dried Thymes

● 1 TBSP Dried Basil

● 1 TBSP Dried Rosemary ( I prefer fresh if you have it)

● 1 TBSP Dried Parsley


Preparation

● Cut the head of garlic halved crosswise

● Mix all the spices into the grapeseed oil ½ a cup of grape seed oil and stir till fully incorporated in a small bowl.

● In a large bowl place all the chicken pieces and pour the spice mix on top. Then rub the chicken with the spice mix until each part of the chicken is fully covered.

● Break apart the cut garlic and spread evenly on the bottom of the pan.

● Distribute the seasoned chicken evenly in the pan on top of the garlic.

● Pour the two 18 oz BBQ bottles on top of the chicken.

● Cover and let rest overnight.

● Heat oven on 450 degrees

● Bake chicken for 45 minutes to an hour depending on your preference.

● Take out and let it rest for 10 to 15 minutes, then enjoy!



Secret Tips: Usually people will only add the BBQ sauce to the BBQ chicken. You can find BBQ seasoning to replace the spices I’ve made up for this recipe.
