Libyan soup with Egyptian touch

This Libyan/Egyptian dish was given to us by Mona Elnokroshy
Ingredients
1. 2 tbsp. of olive oil
2. 1 can of tomato sauce
3. ½ cup of orzo pasta
4. ¼ of beef or stew
5. 1 branch of parsley
6. 1 onion
7. Lemon juice
8. 3 tbsp. of dried mint
9. Salt, pepper
10. 1 lemon
Step-By-Step Preparation
1. dice the onion and stir then add beef
(in oil)
2. Add tomato sauce and simmer for 2
min
3. Add 2 cups of hot water
4. Let beef cook (15 min) add salt and
pepper
5. Add parsley, orzo and let orzo softer
6. Add dried mint and lemon juice
Secret Tips
I add the orzo at the end right before
serving the soup, so the orzo doesn't thicken
the soup
