Ingredients
• Two eggs beaten and set aside
• ½ cup of halal Turkish Sojouk cut in slices
• One small green pepper cut in small pieces
• two shallot onion cut in small pieces
• One medium sized Portobello mushrooms cleaned and cut
• One table spoon of preferred cooking oil, or butter
• Salt and black pepper
• Freshly grated parmesan cheese.
Step-By-Step Preparation
• In a medium sized pan, heat the oil, add the Sojouk slices, and flip on both sides.
• Add the onion, green pepper.
• Stir until tender texture, then add the mushroom, keep stirring.
• Seasoned with salt and black pepper
• Add the beaten eggs. Over medium heat and for three minutes mix and cook the egg to the preferred texture
you like.
• Option, sprinkle freshly grated parmesan cheese on the top
• Served with warm pita bread!
