Ingredients
2 pounds of ground beef or lamb
1 onion (grated)
1 bunch of parsley (chopped)
1 bunch of cilantro (chopped)
A few mint leaves (chopped)
Salt to taste
Pepper to taste
1 teaspoon of cumin
1 tablespoon of paprika
1 teaspoon of cinnamon
A pinch of cayenne pepper
Olive oil (optional)
Step-By-Step Preparation
Mix all the ingredients and knead the kofta really well. Let it rest for 10 minutes. -Take fistful portions of the ground meat mixture, then mold them on skewers. -Grill the kofta skewers on each side for about 4 minutes. -Serve with bread, salad, and hot mint tea. -You may sprinkle them with some sumac before serving for an additional kick of flavor.
