DISH NAME: Kemet Royal Kunafa

INGREDIENTS
★ One Package Kunafa Dough
★ One cup Kerrygold butter salted (I prefer salted)
★ 2 Pint Heavy Whipping Cream
★ 4 Heaping TBSP of Cornstarch
★ 2 Heaping TBSP of powdered sugar
★ 2 Cups granulated sugar
★ 1 cup water
★ 4 tsp vanilla (or rosewater)
★ 2 tsp fresh lemon juice
★ Cinnamon stick (optional)
Preparation
● In a pot add the granulated sugar, one cup of water, and cinnamon stick (optional). Bring to a simmer for about 10 minutes. Remember the longer it simmers the thicker it will get.
● Take the syrup off the heat. Add the 2 tsp of fresh lemon juice and 2 tsp of the vanilla or rosewater. Stir and let it rest. Now you have completed the Sugar Syrup!
● Time to prep the filling! Pour the 2 pints of heavy whipping cream in the pot, add the cornstarch, powdered sugar, and stir until fully incorporated. Put on low heat and stir continuously until the cream has become thick to your preference. Then add the vanilla or rosewater. Take off heat.
● Time to make the dough! In a large bowl add the Kunafa dough and shred with your hand or cut using sharp kitchen scissors. Some people use the food processor.
● Melt the butter, then pour evenly on top of the dough. Get your hands dirty and mix until butter is evenly distributed.
● Now time to assemble! First layer, evenly press down half of the Kunafa dough in the pan. Second layer, add the cream filling. Final layer, cover the cream filling with the last half of the Kunafa dough. Now place in the oven at 350 degrees until golden brown.
● Once baked pour over the sugar syrup evenly onto the baked kunafa. Let it rest for ten minutes then flip the Kunafa on your preferred serving tray.
